I have never been around a Griffon but have been around GWP, GSP and English pointer, also extensively around brittany spaniels. I would argue that a dog being "high strung" is more dependent on the particular breeding the pup came from and the goals the particular breeder are striving to accomplish.
Do yourself a favor and visit the breeder of whatever dog you decide to get, and look at the parents and ask for references. It may cost some time and money but you will thank yourself when you avoid a crazy animal that so many people end up with when they don't do their homework
