How do you know which formations work best against other formations? I'm clueless.

The old tactical adage is that you should usually one more CB than the opposition's striker count. So, 3-back formations work best against 2-striker ones, although ones with wingers who track back can work against anyone. (Your wingers just need to have great attacking skills and stamina on top of solid defensive skills.)
