Tombstone is going to get the consensus vote here, but Wyatt Earp is a good film in its own right. I particularly like Quaid's take on Doc Holliday in Wyatt Earp - although I recognize that Kilmer's may be definitive (Doc and Earp are 2 of the most portrayed historical figures in cinema history, up there with Caesar, Lincoln, etc.)
I mean, on paper, Wyatt Earp's cast is - at least a little better. Certainly Lawrence Kasdan, on paper, is a more decorated director than Tombstones' Cosmatos. However, the final product in Tombstone delivered a slightly over-the-top product that is ulimately much more fun and rewatchable than Costner's Wyatt Earp.
Having said that, I've seen Wyatt Earp, maybe, 2 times. I've certainly seen Tombstone all the way through half a dozen times and picked it up from the middle many, many more times. So, there's that.
ETA: Tombstone is considered one of the greatest Westerns of all time. Wyatt Earp is not.
Most of this.
Tombstone is certainly more "Hollywoody" but Wyatt Earp made much more effort to stick to actual history.
I like both for what they are.
The scene in Wyatt Earp with the pool ball and the bad guy from the Karate Kid was epic.
