Honestly, what really got me into Dylan was listening to a compilation, of all things. I usually loathe and despise compilations and greatest hits because I feel like it removes songs from their original context and intended order.
The Essential Bob Dylan is a fantastic two-CD release that consists of material throughout the entirety of his career. All of the Essential releases are actually really well done. I enjoyed the Judas Priest and Stevie Ray Vaugh versions as well.
This is probably the best overview of his extensive body of work. From there, you can probably determine which of his styles you prefer the most.

The Essential Bob Dylan was what got me hooked as well.
