Not to mention, some of the most renown international competitions do not vary. The 100 Meters doesn't change, but we appreciate the completion itself, and the ability to see an apples fo apples comparison across competions. Unless it's an obstacle competition like American Ninja Warrior, where completion is the main measure, I don't see the value in changing the competition much.

And no one watches that shite outside of the Olympics

They come up with different events in CF for viewership and interest, like announcing the day of the competition. It adds drama and flair. Frankly it needs stuff like that
