So whatever the mindblowing VFX are going to be is something that they wanted to do in season 4, and then in this season and they balked at both. So it couldn't be the doubling of the size since the dragons already have grown over seasons 4 & 5. There was nothing cryptic about the dragons doubling in size.
The phrase "chicken out" makes it sound like it would be controversial. Maybe they just mean that it's difficult.

It could see this being it. We pretty much believe that Euron will make an appearance next season, and that storyline probably should've started last season. I could definitely see that being what they were talking about.
