Okay, this may not help very much but just a little bit of reasoning as to why Stannis did the horrible deed in this show.
"People have also pointed out that Stannis believes himself to be the chosen one, Azor Ahai, who is destined to save the world from the encroaching darkness. So Stannis believes that if he does not succeed, not only will his army starve to death, the world itself will fall to the Night’s King and the White Walkers. I can appreciate his delusion here, but I think that a fitting moment for that delusion to end would be the ritual sacrifice of his own daughter. Stannis is not a good man, necessarily, but I didn’t ever peg him as truly evil, either. When he killed Renly, it was an act of war. This is so much bleaker and more evil."

One thing I haven't seen mentioned is that had Davis not set Gendry free then Stannis wouldn't have had to offer up Shireen to the Lord of Light. So by saving Gendry, Davos killed Shireen.
Which is a fact I'm sure is not lost on Stannis or Melisande. Stannis himself told Melisande that he didn't have Robert's bastard when she said that the Lord of Light wanted a sacrifice of king's blood.
