Square footage are pretty dang close. LINK

Sales per sq ft are based on industry numbers that I've adapted.
Never Busy ($150)(restaurant is losing money)
Rarely Busy ($200)(restaurant is breaking even)
Busy ($300)(restaurant is making money)
Very Busy ($500)(restaurant is making lots of money)

Olive Garden is a public company. You can Google their sales numbers. $3.6 billion in sales divided by 830 restaurants = $4.33 million per restaurant.

Going by square footage still doesnt seem accurate. Places are set up different than others. Sammys is piled in there while a place like Ruffinos is more spread out. You have them and Parrains at over 10,000 sq ft. There is a lot of dead space in those places. Hell in Parrains, the entrance way, bar area and pathways to the different areas of the restaurant are big enough to have a small short order sandwich shop in.

and youre saying Sammys is 4400 square feet. I would imagine that Sammys seats as much if not more people than Twin Peaks.
