your problem sounds like a strange one to me...I have moved in and out of a heck of a lot of apartments and I have never once not done a final walkthrough after my stuff was moved out...I can't really blame them for not wanting to do it before you move out, as a lot of damage occurs when moving furniture in and out...
just tell them when you want to walk through and get your shite out before that time...they arrive, you walk through and hand them the key...

I was planning on doing it just as you mentioned. I would absolutely have my stuff out before the final walk through, but they said they can't do one until after I've given the keys and vacated the premises.
This just screams a scam to me. I was ignorantly naive before, but now it just seems to obvious.
