This. Although they always had 'skirmishes' guerilla warfare was just not as accepted as a 'formal' manner to wage war. Plus the Leaders at this point wanted to avoid the noose.
Plus you would have needed popular support for it to be a successful strategy & by then most Southerners were probably war weary.
Add to that the demographics of the deep South (mostly Black ) plus Union troops would prove an uphill battle .
