I don't have a problem with this. It's a bit more work but you get the same result in the end. This is kind of our method for shrimp because of the extremely short cooking time.

As long as you aren't pouring seasoning on the shells to hide the fact that you screwed them up to begin with, you're fine by me.

You cool the pot, I boil for less time but keep them in the same water. No big deal.

I refuse to believe the seasoning on the shells method can be "done right". Been horrible the times I had it.

Sometimes you have to be a dick at the boil or and take over. Will be doing the boiling tomorrow because this group has screwed up their crawfish before. too each their own.

The only thing that pisses me off truly about crawfish is when there are about six kids at a boil, and the person boiling makes them mild purposely "so the kids can have some". Then the little bastards eat about a pound combined and now everyone has to eat shite crawfish.
