most crawfish places in Breaux Bridge (crawfish capital of the world) only use cayenne pepper and butter in their water.

Simple is better sometimes I guess.

Yes.

But completely changing the way crawfish taste by omitting the bay and celery isn't one of them.

I put a considerable amount of fresh stuff in my boil. We eat it, and it makes everything better.

Just because they call themselves that doesn't make them the crawfish cooking capital of the world.
