I do damn it!
Make brown roux, add onion, celery, bell pepper, garlic. Add chicken stock. Add turkey necks. Add more chicken stock to cover necks. Bring to boil, then bring to simmer. Add salt and pepper. Let cook for about 2 hours or until just before the meat starts to fall off the bone. Meanwhile make a pot of rice. Like crawfish heads, don't be afraid to suck 'em.
ETA: Adding Better Than Bouillon to the pot certainly doesn't hurt.
