I think you should spend under 5k on the engagement ring then upgrade it for her at 10 years if you make it that long and are more financially stable.

When my wife and I got married, we didn't have a pot to piss in. Bought each other a couple of super cheap gold bands and went to the JOP.

Bought 2 engagment rings and another band since, but I've been wearing my original gold band lately. I like the story of where we began and have grown to now. Means a lot more. Going on 14 years now.

If you have a partner who places great emphasis on such things, run!
