I hated missions with constant waves of enemies
I wanted to be able to memorize how many guys were in each building do kill. Some games/missions would just keep sending guys until you reach a certain point

Yup. Trying to keep that chick alive at the end of Goldeneye almost ruined a perfect game.

Is TLOU really an escort game? Most of the time she's doing cartwheels in front of people and they magically can't see her.

I also hate long drawn-out cut scenes that suddenly present you with stupid QTEs that you inevitably miss, so you die and get to start the cut scene over again.
Oh my, this. I doubt anyone here has played Knights' Contract, so no one knows this suffering. I played this game on Hard, and the biggest thing that the difficulty affected was the amount of time you had to hit the QTEs. On the last boss, I had to memorize and press it just before it appeared to pass through.
You were forced to fight the ENTIRE BOSS over again if you failed ANY QTE. LINK

Games with unskippable credits as well. Often when I finish a game I want to go back and explore the world. Nope...have to wait 15 minutes for Herio Nasesacki to be thanked for being assistant visual coordinator.

I'm actually ok with this. I'll give a few minutes to the guys that spend 3 years making the game.

"Snake? Snake?! SSSSNN NNNAAAAAAAAAAAKKKKKEEEE!" [cue Metal Gear game over screen with loud music]
It stops being funny after a few dozen times.
