Lived there 7 years, am on Oahu for the past 3 now. Get "The Ultimate Kauai Guidebook" and you will have everything you need right at your fingertips. NaPali sunset or snorkeling cruise is a must. Helicopter is great too. Lots of great hikes and waterfalls. The beaches are awesome and there's not that many people especially if you're not going in the summer. There's only 60,000+ people that live there. The book will have easy directions on how to get there and ideas of what to do.
