I adapted the recipe from my Mom's. I'm just worried about finding good pecans down here. I could always find fresh ones in NELA. Someone told me to try Dorignac's.

It's the icing that makes it so dang good....and I'm not a fan of regular icing...cream cheese icing on the other hand.

Same here. I cut off most cake icing and throw it away. Not on carrot cake, though.

my sister does a combo of cream cheese and homemade buttercream that she puts on her red velvet...her red velvet is my favorite cake.
