Can you explain how this is a "new trend?" Also, I have never heard the term Tomahawk Rib-eye. We always called it bone-in or Cowboy Rib-eye.

The meat next to the bone is sweeter like in a t-bone or bone-in chop

Bone-in is different from Tomahawk, no?
