1 pound roll Jimmy Dean sausage (Hot)
1 cup chopped onions or Guidry's mix (better)
1 package fresh or frozen hash browns
8 oz shredded cheese (I'm lazy and use the bagged Mexican blend)
8-10 eggs well beaten

Brown the sausage, breaking up into crumbles. Just before its nearly done, add chopped onions/veggie mix, sauté until clear. Set aside. Brown hash browns lightly so they are cooked well but not crunchy. Add back sausage and onions, add half your cheese. Mix well. Add eggs, mix well again. Put in 13x9 casserole (I use disposable pans to take to hunting camp). Sprinkle with remaking cheese and bake at 350 until done (about 20 minutes).

Feel free to season the eggs or hash browns. I find the hot sausage is usually flavor enough

I've added chopped ham, bacon crumbles, leftover grits. Have made it with as many as a dozen eggs for when the crowd was bigger. Serve in squares like cake. Reheats great.

The rice one sounds good MD, but I'm not sure about rice early morning-outside the box a bit.
