Nothing. But most of these types do this on purpose, knowing that in the last 30 minutes or so the restaurant has already cut a lot of its staff meaning there is a greater chance for something to go wrong, meaning easier chance for discount or free food.

Unless you enjoy spit in your food, do not go dine in and take your sweet time within 45 minutes of close. Rule of thumb from a former cook.
