Cook the in a gravy with onions long enough until they have no taste.

I've never eaten a muskrat. Eaten plenty nutria. I'd say nutria is 74% better than coon, if you are cooking the small/medium sizes of each. Many folk have eaten nutria at my house and commented how awesome my "rabbit" stew was. Gotta wait until they've had a second helping to plop those big orange teeth out on the table.

I went hunting one time with my uncle. His friend cooked us a "rabbit stew". I noticed the rabbit quartered meat was larger than any rabbit I had ever eaten and referred to it as a rabbit on steroids. It tasted better or as good as any rabbit I've ever eaten. It was n rat. I wouldn't clean one, but I'd eat it again, good grub.

In my trapping days I ate nutria a few times.

BBQ---soso
gravy---good
jerky---awesome

and for the record duck is excellent. if you don't like it your cook sucks.
