UCF - why does nobody talk about them, would be a better option than all that have been listed before

IMO i think its because UCF is still relatively new to the scene. Their school is large, but a lot of thos are commuters. They have no real sports history or tradition. I get that its in Florida and the recruting that comes with that, but BYU, Cincy, Colorado St or Memphis do more for the Big 12 in all sports than UCF does.

Look at Colorado St right now:

Football - (10-2), Building a brand new on campus stadium.
Womens Volleyball - Sweet 16 (31-2)
Mens Basketball - (8-0)
Mens Cross Country - NCAA National Championships, ranked 25th
Softball - (34-17) last season

Colorado St actually makes a GREAT case to be added. Their athletic programs are all doing really well. Now would be a great time for the Big 12 to add them .

I agree, it just seems like the Big 12 is now focused on bridging the gap between West Virginia and everyone else.

Colorado State is also a USNWR top 100 university. Even though they're not AAU, they're ranked higher than their counterparts in Boulder.

Colorado State - Brings the state of Colorado back to the Big 12. ft. Collins is a good college town that can get behind its team. Think switching to Big 12 brings them more recruits, plus they play a PAC 12 team every season.

Memphis - Get attention in SEC country as the SEC did by adding A&M. Program would improve but that football stadium needs improvement.

Cincy - Makes sense because it is a market. Think this is the easiest choice for them to make.

BYU - Not a fan of BYU. Yeah their program makes noise occasionally but Memphis and Colorado State make more sense. Remember when TCU first came over people thought they were not big enough. But look what adding Big 12 to your sleeve does to you with recruiting.
