Possible the opening and closing of the fridge? Would that do anything to changing temperature?

No. It's closed and stays cold pretty much the whole time. I guess i need to decide if i want to age my beers in the fridge, where they won't really age, or use the fermenting fridge, which gets up to 70 during fermentation, or i can set to 55 during non fermenting periods. Problem, is that temperature will fluctuate from 55-70.
