May I respectfully offer a counterpoint? To wit:

Don't watch "The Deer Hunter."

I'm sorry, I know it's a Very Important Movie and a classic and all that, but, Christopher Walken scenes aside, it's deadly, deadly dull. If you're going with 70s dramatic/action classics, "The Godfather" (and II), "Dog Day Afternoon", "Apocalypse Now", "One Flew Over the Cuckoo's Nest", "The French Connection", "Chinatown", etc, are all much more watchable. (And that's not counting comedy classics like "Holy Grail" or "Young Frankenstein"/"Blazing Saddles")

Edit: I just noticed "Taxi Driver." Absolute must-watch from the decade.
