I've seen them painted and clear coated... if you want to leave the wood look then you could always just put clear coat over the wood.

The poly, clear coat, whatever you want to call it...doesn't work. I had a half dozen layers of poly on my boards and after one football season, they looked like they were a couple of years old. The bottom line is those heavy washers hitting those boards on their edges will simply tear up that clear coat. It helps a little...very little. If you want to keep the boards looking nice, go with cornhole bags.
