My dog does that when she goes on a trip for a few nights or a big move. She would only eat once every two days or so. The dog will eat when it is hungry. If it doesn't start to eat, it has something wrong with it.

When we were worried about it, we offered the dog a treat and she ate it up. If the dog isn't drinking, that is when you should be worried.
