I do mine similar but use a cast iron stove top griddle. Key is to get the cheese melted first. Sometimes if the oven is on for other reasons I'll put them in the oven on broil for a couple of minutes.

Only reason I use the electric one is because I can knock out 2 at a time. But the principle is the same.
