Hot, dry cast iron skillet. Make hamburgers how you like. I'm in the salt and pepper only group and I only season the outside after its made.
Salt in bottom of cast iron and put burger in. Don't touch until it releases then flip, cook not past medium. Do not mash with spatula. Just leave it alone.
Put whatever you want on it.
My wife does it the same but just as it is getting ready she puts whatever cheese (currently its Brie) on it, lays the bun on top of the patty and covers it with a dome for about a minute. Melts the cheese, steams the bun and gets a bit of the grease on it.
