Well tilapia is a freshwater fish so to advertise that particular product as "Gulf" fish would be unethical if not also illegal. It was probably something like black drum. If not, if something solid like red snapper or barramundi, then props to Galatoire's. But I doubt it. When you have high quality products on your menu you advertise that fact .. when you don't you throw out vague labels like "fresh Gulf fish."

In almost every restaurant I've been to that offers "gulf fish," it tends to always be black drum. So boring.
Beausoleil threw a curve ball one night and their fish was mangrove snapper. A friend got it and it was delicious.
