Yeah. I roast them as well for a variety of dishes. My wife is a vegetarian and they're one of our staples. I cube them up, roast them with cumin and chili powder, and use them as filling for tacos along with black beans. I roast them with paprika, salt and pepper and mix in with quinoa and a balsamic/honey dressing.

You can also make them into wedges and bake them which is delicious. I use the roasted ones as a pizza topping with a caramelized onion "sauce" and arugula as well. They're a great versatile ingredient.

They're a really common dish in west african cuisine, so google sweet potato african stew, and you'll find a lot of possibilities. Here's a great example from Bittman:
