So much meat. That large dry aging room was awesome. Contrast that with Brock's pig episode where the crazy lady named and nurtured the pigs. 
That woman was off her rocker, but the meat looked amazing.

It's amazing how much time and care and work goes into what some of these top chefs are doing at their restaurants. Really makes me less sore about the money they charge for some of these dishes and products you see out there. There's a wonderful symbiotic relationship between purveyors / chefs.
