I was looking at flights to Barcelona the other day. For two that starts at $3200
Madrid is a tad cheaper. At least that's what I've been seeing. Also, flying out of New Orleans is a bit more expensive. I've found flights out of New York for $1000, which I could get a free flight to with miles. (I know that may not be an option for all)

12 nights in a hotel would be roughly $3600-4000.
If you want to stay at the Ritz.
Go to AirBNB and you can find some very nice and cozy places for under $200/night easily. I'm comfortable with the places there for under $100, but if you want to be a little more lavish $200/night will get you a snazzy apt.
Some may be opposed to apartments and bed and breakfasts, but IMO it gives you a much more ethnic experience than you would staying in a hotel.
There are ways to travel cheap without sacrificing comfort.

The Ritz is more than $300 a night in most cities
