Animal Kingdom is generally a later arriving park, but the new Lion King show is legit...arrive early to the park and knock out some key meet & greets early before lines build. Try to catch the 10am Festival of the Lion King, make sure to see the Nemo Musical (I hate it but my wife and daughter love it) so I usually go right next door and do Everest like 5 times on the single rider line while they watch the show.
One of the lesser known things to do at Animal Kingdom is Rafiki's Planet Watch. There is a seperate train that takes you out to the conservation station where there is a petting zoo (sheep, goats, etc) with brushes for the kids. Inside you can take pictures with Rafiki and often times that have live animals inside as well for the kids to see/touch. My 4 year old got to pet a baby alligator which she still talks about to this day..

First things first. Kids want to play. Whether they are in Disney or at Uncle Cletus's, they want to run around and have fun, so look for any playgrounds or fun shite for them to climb on, like characters.
Breakfast - book this each day, early as possible, at the park. Crystal Palace for Magic Kingdom, Akershus for Epcot, Tusker House for Animal Kingdom, and I forget the name of the one right by the 50's primetime in Hollywood. This gets you into the park before it opens, and allows you to bypass waiting in line. If the park opens at 9am, make breakfast for 9:15 or a few mins after. That way, you go in early, walk to the attraction you want, ride it, then go to breakfast.
Now for 2y/o's -
Animal Kindgom - Safari fa sho, Nemo, boneyard. Rafiki's Plantwatch has a train ride to get there if they like trains, and a petting zoo. This is a massive time sink and boring though, avoid except to ride the train. Kali river rapids also has a low height requirement, not low enough for 2yo's, but others reading make a note.
Epcot - Nemo ride, Figment, Ellen's Commercial Ride, play in the Innoventions Place, Maelstrom, fireworks at 9pm, and go listen to the England band and let them run with the other children through the hedgemaze, provided you have the adultpower to cover the exits.
Hollywood Studios - Avoid this park. They have the great movie ride, which they won't like much. Muppets show, Honey, I'm Rick Moranis Playground, backlot tour. Indiana Jones maybe, Cars NO. Cars is fun, but it takes soooooo long to do, it's a daykiller.
Magic Kingdom - This is where you want to spend your time. Fantasyland is great, Tomorrowland, meh. Everything here will be fun.
The plan we used at 2yo was go really early, leave around 2pm. Nap if they nap, swim if they don't. Eat dinner at hotel, or the park you go back to. We would end up at a park for 6pm-10pm or so, kids would sleep on bus ride back, we would get in, pack up for the next day's haul, and go to sleep for 11:30pm after a quick bath/shower tap.
