As much as I get excited for the Man Utd vs. Liverpool/Man City/Arsenal games my favorite game in any sport to watch is the Superclasico.
My favorite derby to witness (not at the game, but in the city) was Universidad de Chile vs. Colo Colo. It started when Pinochet was named honorary president of Colo Colo, and the team won most of its titles during this period, and Univ. de Chile was is made up of upper/middle class fans that were politically opposed. I was with a group of Univ. de Chile fans, and although they lost, the whole city was divided and every street you went down in Santiago there were supporters yelling at each other.
