Access is not a problem, already have an eduroam account. I'm just worried about the signal strength being able to carry the stream.

Getting an Apple TV on the eduroam network is going to be a huge pain in the butt. They don't support the network security type that LSU (and eduroam) uses for authentication. Even if you get it added, the speed and connection strength is most likely not going to support what you need. Streaming is the first thing to suffer under large loads of use.
