Portland passed a law a while back that made it illegal for food trucks to park on public property. They also streamlined the permit process to make it easier to start one up. That actually started a boom in food trucks here, because anybody with a parking lot in the metro area now rents out part of their space to food trucks, and end result is food truck “pods”, where anywhere from 3 to 60 food trucks park permanently in one spot. The end result is that we have what amounts to food courts all over the city. According to this article, the count of food trucks is about 500. LINK
Some of the food trucks have graduated to brick and mortar restaurants, with mixed results. Some, like Lardo, have done really well. Other food trucks had trouble going from a model where they do 2 or 3 things really well, to a full sized restaurant with a full-sized menu.
