Considering I don't closely follow European player contracts, do European Clubs routinely over pay for older players as a thank you for the years?

At Manchester United I think the policy is to only give 1 year contracts to players older than 30. Someone can correct me if I'm wrong, but I think the only exception was Giggs.

I know for Arsenal, they don't give multi-year contracts to players over 30. Bacary Sagna is one of the top 3 players on the team, but they won't be re-signing him this offseason because of that policy and his warranted request for a multi-year deal.

No they ditch your arse with the quickness and players usually do a few things. Either go to MLS or the A-league to get paid more than they would in Europe and still be a top player in that league or they sign for their first club who they came through the youth ranks with and first got first team football with.

Also a few English players or EPL players went to Scotland to restart their careers.
