Cop is slang for the 18th century British English word "copper", which meant capturer. Also was a reference to their copper buttons on their uniforms.

Yes it is derogatory, and has never been an acronym for anything.

That is not accurate. COP was an acronym for constable on patrol. Most officers are not constables so the term does not fit but it is still, obviously, commonly accepted.
