I agree with most of your issues, but thought these were explained sufficiently.

Stefan turned because he was a greedy human. He cared for Maleficent, but cared more about changing his own status. His wife was the original king's daughter. The reward offered by the king was the hand of his daughter, thus making Stefan the new king.
