Don't really have portions because my batch sizes vary a good bit depending on how many tomatoes I have coming in. I make some batches with roasted peppers/ tomatoes and some not. But here's the basic ingredient lineup.
Tomatoes (romas preferred, but any will do)
Garlic
Lots o Cilantro
Various peppers
White onion
Lime
Lemon
Chili powder
Salt
sugar
vinegar (if canning)
Seed and chop tomatos. Seed and chop peppers. Chop up garlic, cilantro onions. Food process the above to your desired consistency. I make some batches chunky some pretty thin. Put into a big pot of low/medium heat. Stir in everything else and let it come into it's on for just a bit.
Put in cans and leave about 1/2" of air space
Water bath for about 15 minutes
Listen to the lids pop all night

Im surprised nobody's mentioned it yet, but peppers go great with tilapia
