I always use Dexter Russell knives with the white handle, Sani-Safe I think it's called, 8 or 9". They hold up good to abuse and don't cost that much, $20-$30, you might even get a sheath with it in the package.

Yeah, those Dexters are great knives. Hold an edge really well. I hardly use an electric knife anymore because of them.
