Fine Cooking did a piece on guacamole a few months back. They have a basic lime, onion cilantro recipe but also some different things to try like cucumber pineapple guac, seafood guac, and blue cheese-almond guac. Let me know if you try one. As usual I have only half the stuff to make each recipe in the house right now.

FYI that grilled cheese with bacon and guacamole is killer. Definitely worth the effort.
