A few have been mentioned already but:

Pearl Harbor including USS Arizona Memorial and tour USS Missouri
Go on a tour of the island of Oahu which ours included a stop at the Dole Plantation for Dole Whip as someone had mentioned.
Hike up Diamond Head for some great views.
Do a Luau. We passed on the Polynesian Cultural Center luau because no alcohol. Did the Luau at Paradise Cove.
Sunset Dinner Cruise
Spend a day water activities snorkeling, jet skiing, etc.
