If the co-pilot disposed the pilot, just how hard would it have been for him to fly off-course and crash/land somewhere else? Would the other crew members or passengers have had any idea they weren't on the correct path?

There was deliberate action taken for some reason. Obviously, it wasn't because of mechanical issues.

It was dark, and most of the passengers were probably asleep. It would be hard to fool the cabin crew, though. And eventually everybody would wake up and see they were over water, not the Chinese mainland.
