I also wonder why modern chefs haven't included it on more dishes.

It's simple, quick and cheap. Plus, it can be put on practically anything.

Susan Spicer has a pimento cheese and andoille sandwich at Mondo. Had it for lunch a couple of years ago and I remember it being really good.
