I love it as a simple comfort food. My wife's grandmother always makes pimento cheese sandwiches specifically for her grandfather on Christmas. Most of the rest of the family doesn't care for it, but I always tear it up.
I'm kinda surprised I haven't seen contemporary southern chefs do some creative interpretations of it.
