2. The generator was apparently a giant satellite dish. All the rebels had to do was nuke it from space. Hell, even just kamikazing a couple of ships at it would have been easier than the plan they came up with (and they wouldn't have needed the Hairy Midget Brigade either).
These are two simple, common-sense things that anyone thinking the situation out beyond "oooooo! Merchandising" would have understood.

How would the rebels get past the Empirial fleet to get to the moon? Han's team had to fly a stolen Empirial shuttle to sneak past them (even though Vader figured it out because Luke was with them).

I get your Kamikaze argument.
But i saw the emperors strategy to lure the Rebels in as a pretty decent one. make them think its not fully operational offensively by using the shield generator on the moon.
One thing to remember to that in 1,2 and 3 the galaxy is in a depression of sorts. Resources may have dictated to do things the way they were done.

These are the good guys, good guys don't use Kamikazes. Would you be okay with the US using Kimikazes?
And they aren't going to nuke an innocent planet full of innocent creatures either. Again, good guys don't do that
