You need to spread your wings a bit. Balsamic vinegar comes in many forms from many sources. It is like the different nuances of extra virgin olive oils to taste test about what works with each of them. It sounds weird, but vinegar over strawberries is a knock the ball out the park home run. Use it(try taste testing as many as you can over time) in what ever manner you desire. You have only touched the surface. A personal favorite one is a raspberry infused white wine vinegar.
