When we subbed out our build we bought all of the hardware online. Cabinet hinges and knobs, door locks, door stops(both on hinges and on baseboards). We also bought all of our bathroom stuff (toilet paper holder to towel bars and rings). Saved a good bit over local folks.
1)The biggest problem we had was with the bank. they had certain things they wanted finished before you could get a draw. We only got 4 draws. It made it tough. See if you can get 5 or 6. Will make your life a whole lot easier.
2)Never pay before the work is done. I did a few week by week payments with subs but never any deposits.
3)whatever you plan time wise add a month to it. You are 1 job for many of your subs. Odds are you're not giving repeat business to them. They will put you off for other contractors that give them a lot of work. Its just going to happen.
Good luck I did it and am still happily married with the exact house I want, for $30,000 less than I could have paid someone else to do it.

to add to this, don't pay until you pass inspection. if you are building anywhere in louisiana, you will have to pull permits and have an city inspector look at it. if you pay your subs before your inspection and you fail, they aren't real quick to get out there to fix it. if you pay your labor, i.e. footing diggers, framers, etc., and it fails, good luck getting them back out period.
