Pull it from the fridge an hour before cooking. Rub with evoo, then season with salt and fresh cracked black pepper. Cook fast over direct, hot coals...0ne to two minutes per side to a rare/medium rare . Rest it a few minutes before slicing.
This here. This is the end result of such method. Best I've found for strap.
I use a very similar method. Only difference is I have been using a really hot cast iron skillet with olive oil instead of the grill. Quick and easy. sear each side of the whole tenderloin or backstrap. Then pull it and lightly cover with aluminum foil and let it rest about 10 minutes. Then slice it into medalions that look alot like the picture LSUballs posted.
I also usually marinate the meat for about 24 hours in italian dressing. The big key for this, or any steak, is to let it get close to room temperature before cooking. You will see a big difference.

I'm mainly go with backstrap/ kidney strap. And I agree with you on the later being a pia to cook most times.

1. Put in a zip lock with meat tenderizer (The kind that looks like salt) for day and half.
2. After tenderized for day in half marinade for 2 days with you choice of marinade.
3. After marinating for 2 days take out and filet it in half leaving attached like a Subway sandwich bread. leave it together but open it up.
4. Stuff with either bell peppers or sliced jalepanos without the seeds. Add peper jack cheese.
5. Fold over like you have a sandwich.
6. Wrap in Bacon.
7. Grill.
8. Serve with a side of spiced jelly.
This is the recipe from John Folse after the hunt deer bombs.
Fantastic
